Well be nice about it. Show the owner that your very interested in the project. Also show them a sketch of the piece. Make sure you include the store name in the piece so they get a some part of the deal. Show them some of your prevoius work but not anything illegal. Tell them it's free. And be nice about it. Don't go in there looking like a bum. If you act professional the more likely they'll be interested in you.

have an entire portfolio of work. push art instead of expression. allow the owner to decide what they would like it to look like or say, so that way they feel it is theirs and adds to their business rather than hurting it
even offer to do it for free

i've done a few legals and even a paid gig. like vagrant said, have a portfolio ready and explain how it'll bring attention to the business in a positive way. try skateshops, bars, and art friendly establishments

They've always approached me.
Normally tattoo shops.
And I almost never do it.

LOL I don't know how helpfull that is man. :p
Anyway like others said, hit up shops that are more likely to be 'Pro Graff' but also look for shops with walls that are blank that toys have be tagging and offer the service stating that if you do an end to end it will be unlikely that they will have to worry about people scribbling on their wall any more.
